Lemon Up Cheesecake Bites

Adventures in Cooking with Tori was something that I used to love doing. Then the pandemic hit and I allowed her to have a lot of freedom in the kitchen. Today we stood side by side and put together some samples for the cookie booth we'll be at today.


Here's the recipe for our Lemon Up Cheesecake bites.


Lemon Up Cheesecake Bites


Crust:

1 box Girl Scout Lemon Ups

5 T unsalted butter, melted

¼ c sugar


Cheesecake Mixture:

1 can sweetened condensed milk

3 eggs

16 oz cream cheese

¼ t lemon extract

1 t vanilla


Garnish:

Mint leaf

Blueberry


Heat oven to 350 degrees.


Blend the Girl Scout Lemon Ups and sugar in food processor until fine. Add 5 T melted unsalted butter and blend for 10-15 more seconds.


Spread crust in 9 X 13 greased pan. Bake crust for 10 minutes.


While crust is baking, mix together sweetened condensed milk, eggs, and room temperature cream cheese. After well blended, add in extracts and combine for another 20-30 seconds.


Pour cheesecake mixture over crust and bake for 40-50 minutes.


Allow to cool.

Garnish with mint, blueberries, and buttercream frosting.
